My favourite potatoes recipe

This is one of my favourite potato recipe. and the most favourite of my father!
 
Ingredients for 4 people
 
1.5 kgs potatoes
6 tablespoons olive oil
1 tablespoon fennel seeds
180g.pitted taggiasca olives
salt/pepper
 
Preheat oven at 250°, meanwhile peel, wash and cut potatoes in pieces. In a non stick pan put potatoes, olive oil,salt,pepper,fennel and taggiasca olives, mix everything using a wooden spoon.
Bake for 30 minutes, stir from time to time to keep potatoes from sticking. Serve hot, ideal with roasted meat or fish.

The matching with potatoes beyond their preparation and cooking is a young white wine with light-bodied but with a dominant note of freshness, soft, fruity as  Colli Piacentini Ortugo or Nuragus of Cagliari
