Ingredients for 4 people
1.5 kgs potatoes
6 tablespoons olive oil
1 tablespoon fennel seeds
180g.pitted taggiasca olives
salt/pepper
Preheat oven at 250°, meanwhile peel, wash and cut potatoes in pieces. In a non stick pan put potatoes, olive oil,salt,pepper,fennel and taggiasca olives, mix everything using a wooden spoon.
Bake for 30 minutes, stir from time to time to keep potatoes from sticking. Serve hot, ideal with roasted meat or fish.
