Pizza............again!

Pizza.....again !
Very simple recipe, typical of Tuscany , excellent!
Choose the cheese for the pizza is not simple: In Italy we have a wide range of cheeses and each region or area has a preference, Pisa prefers to use parmesan cheese and for this recipe I choosen grated pecorino romano.
This cheese is produced in Lazio, in Sardinia and in Maremma, using milk from cows breeded in the wild, it's tasty and salty.
 
 
Ingredients
 
Pizza dough as per my recipe
300g grated pecorino romano
800g. chopped tomato sauce
10 tablespoons olive oil
salt/pepper
 
 
The indicated ingredients are to prepare 3 baking pans, if you want to add other pecorino cheese .... it will be perfect, depends on your taste.
Grease with olive oil the non stick pan, roll out the dough, spread tomato sauce and season with salt and pepper. Drizzle with 2 tablespoons of olive oil. Bake in preheated oven at 250° for 15 minutes, take out the pan, dust with pecorino and cook for 3 minutes, serve hot.
Ideal with mature red wine, fruity, spicy as Vino Nobile di Montepulciano.
