Sofrito is a mixture that gives thickness to dishes, is the base of most popular Italian recipes.
The secret is to cook it at low heat otherwise the taste will be bitter, sofrito should be prepared using non salted butter, usually I cook it with olive oil and I think that is nice also, do not season with salt.
I prefer to use yellow onions, anyway all other types are perfect.
Ingredients
500g onions finely diced
300g carrots finely chopped
200g celery finely chopped
150g butter or olive oil
Lightly fry in a non stick pan onions with butter or olive oil, add carrots and celery, stir constantly for 20/30 minutes. At the end use immersion blender.
