Simple fish cake, healthy and quick recipe, as usual I suggest you to choose fresh anchovies.
Ingredients 4 people
800g. fresh anchovies
300g. pecorino cheese, sliced
20 cherry tomatoes, diced
8 tbsps olive oil
salt/pepper
Preheat oven to 200°, gut the fish, wash and place on the base of each mould diced tomatoes, then cover with drained anchovies and season with salt.
Fill with cheese and close the cakes and drizzle with olive oil.
Bake for 5/7 minutes, serve hot with potatoes pureƩ.
